Chocolate Raspberry Layer Bars

Ingredients

Base

1 cup (250 mL) ROBIN HOOD All Purpose Flour
1/4 cup (50 mL) icing sugar
1/2 cup (125 mL) LACTANTIA Butter


Filling

1/3 cup (75 mL) SMUCKER'S Pure Raspberry Jam
1 cup (250 mL) CHIPITS White Chocolate Chips
4 oz (125 g) cream cheese, softened
2 tbsp (30 mL) light cream or milk


Topping

1 cup (250 mL) CHIPITS Semi-Sweet Chocolate Chips
3 tbsp (45 mL) LACTANTIA Butter



Directions

Base

1. PREHEAT oven to 375ºF (190ºC). Spray a 9" (23 cm) square cake pan with PAM Cooking Spray. COMBINE flour and icing sugar. Cut in butter until mixture is crumbly. Press firmly into greased pan. BAKE at 375ºF (190ºC) for 15 - 18 minutes, or until golden.


Filling

2. SPREAD jam on warm crust. Melt White Chocolate CHIPITS as directed on package. Beat cream cheese and cream in small mixer bowl. Add melted chocolate, beating until smooth. Mix well. Spread evenly over jam. Chill to set, about 1 hour.


Topping

3. MELT CHIPITS chocolate chips and butter together over low heat, stirring until smooth. Spread over filling. Chill until set.

Wow this is one of the best. It is strawberry season and this is a great treat for the 4th of July. It has been awhile since I used my Ice cream Machine. When I saw this Strawberry Cheesecake Ice Cream Recipe I had to give it a try. It was defiantly worth the effort. Your Family will love it. Enjoy.


Ingredients

1. 8 0z cream cheese
2. 1/2 cup sugar
3. 1 tablespoon lemon juice.
4. 1/2 teaspoon vanilla
5. 3/4 cup fresh pureed strawberries
6. 1 cup half and half


Directions

1. Blend all ingredients until smooth . Refrigerate for one hour to chill.

2. Follow directions for your Ice Cream Machine.

Ingredients

1. 1 package 2 layer white cake mix.

2. 1 small package Jello-Strawberry gelatin.

3. 2/3 cup Sour Cream.

4. 2/3 cup powdered sugar

5. 1 tub 8 oz. cool whip

6. 1 1/2 cups sliced strawberries


Directions

1. Preheat oven to 350 degrees.

2. Grease and flour 2 -9 inch cake pans.

3. Prepare cake batter as directed on the package.

4. Pour half the batter into a medium bowl and mix in the dry Jello until well blended.

5. Spoon half of the white batter, and half of the strawberry batter , side by side- into each cake pan.

6. Swirl the batters together using a teaspoon

7. Bake for 30 minutes and let cool thoroughly.


Frosting Directions

1. Mix sour cream and powdered sugar in a medium bowl until well blended.

2. Gently stir in whipped topping.

3. Cover the first cake layer with 1/2 the frosting. Top with 1 cup of strawberries.

4. Place the remaining cake layer on top and finish with the frosting on the top and side of the cake. Top with the remaining strawberries.

Fresh blueberries from the patch turned into an ice cream creation. The blueberry flavor is just intense. The color is beautiful.
Combine this together with the texture of Home made Ice Cream and what a treat!


Ingredients

1. 4 cups fresh blueberries or frozen blueberries

2. 2 cups sugar

3. 2 tablespoons water

4. 4 cups half-and-half cream


Directions

1. In a large saucepan, combine the blueberries, sugar and water; bring to a boil.

2. Reduce heat and simmer, uncovered, until sugar is dissolved and the blueberries are softened.

3. Strain mixture and discard seeds and skins.

4. Stir in cream.

5. Cover and refrigerate overnight.

6. Fill cylinder of ice cream freezer two thirds full and freeze according to the manufacture’s directions.

7. Refrigerate remaining mixture until ready to freeze.

8. Allow to ripen in ice cream freezer or firm up in regular freezer for 2-4 hours before serving.

Sometimes things are moving just to fast to take the time to cook. This Blueberry Breakfast Smoothie will jumpstart your day Big Time. Simple quick and nourishing. This simple recipe has an excellent blend of flavors. We were in a hurry this morning and this is what we made.


Ingredients

2/3 cup frozen Blueberries

1/2 cup organic Vanilla Yogurt

1 Banana

1/2 cup cold Fruit Juice ( for this recipe I used White Grape Juice)

1 Tablespoon Wheat Germ


Directions

Combine all ingredients in a blender or food processor. Blend until it reaches your desired consistency.

You can play with this a little by using different flavors of Fruit Juice.

Simple Blueberry Muffin

It amazes me every time I see a Muffin Mix in the store. Their seems to be no since why you would use a packaged mix when it is so easy to create them from scratch. This Simple Blueberry Muffin Recipe is tops. Very easy to make and is rich and delicious with Blueberry flavor. You can use fresh or frozen Blueberries.

In this batch I used frozen we had stored in the freezer. Enjoy!


Ingredients

1/2 cup butter or margarine, at room temp

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla

2 teaspoons baking powder

1/4 teaspoon salt

2 1/2 cups fresh blueberries or frozen blueberries

2 cups all-purpose flour

1/2 cup milk


Directions

1. Pre Heat oven to 375°.

2. Grease 18 regular-size muffin cups (or 12 large size muffins).

3. In bowl, mix butter until creamy. Add sugar and beat until pale and fluffy.

4. Add eggs, vanilla, baking powder, and salt. Mix with mixer till combined.

6. With spoon, fold in half of flour then half of milk into batter; repeat.

7. Fold in blueberries.

8. Spoon into muffin cups. About 3/4 full.

Cool and Enjoy!

This Blueberry Sour Cream Cheesecake Recipe is Great. We had such a good year here foe Blueberries last year its been a challenge to use them all up. So using Blueberries from the freezer- this is my latest creation. Enjoy!


Ingredients

  • 3/4 cup graham wafer crumbs
  • 1/2 cup vanilla wafer crumbs
  • 1/2 cup finely chopped blanched almonds
  • 1 ¼ cup granulated sugar, divided ( see directions )
  • 3/4 cup granulated sugar, divided
  • 1/4 cup butter or margarine, softened
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups blueberries, fresh or frozen
  • 8 ounces cream cheese
  • 2 cups sour cream
  • 3/4 cup granulated sugar, divided
  • 2 large eggs
  • 1 tablespoon lemon juice

Directions

  • Preheat oven to 350 F degrees.
  • In a mixing bowl, combine graham wafer crumbs, vanilla wafer crumbs, 1/4 cup of sugar and almonds.
  • Cut in butter using a pastry blender or a fork, until mixture is crumbly.
  • Press crumb mixture into an 11 inch x 1 1/2 inch spring-form pan.
  • In a separate small mixing bowl, beat together egg, vanilla and almond extract.
  • Drizzle mixture over crumb mixture in pan.
  • Bake in preheated 350 F oven for 8 to 10 minutes or until firmed and no longer shiny.
  • Remove from oven and let cool.
  • Spoon 3 cups of blueberries evenly over base.
  • Sprinkle 1/4 cup of sugar over the blueberries.
  • In a mixing bowl using an electric mixer, combine cream cheese, sour cream, 3/4 cup sugar, eggs and lemon juice and mix until well blended and smooth.
  • Pour cream cheese mixture over blueberries.
  • Bake in preheated 350 F oven for 1 to 1 1/4 hours or until center of cake is barely firm to the touch.
  • Remove cake from oven and immediately run a knife around inside rim to loosen cake; let cool on rack in pan.

Cover and refrigerate for 8 hours

The Holidays are a great time of the year. But this past Holiday just like the rest, their was too much good food. As a result we have tried to cut back on the sweets a little bit in an effort to get rid of a few extra pounds. I just had to make an exception for this Strawberry Coffee Cake Recipe. You don’t see Strawberry Coffee Cake to often. I just had to give it a try. Absolutely Delicious!


Ingredients

1 cup all-purpose flour
1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 egg, beaten

1/2 cup milk

1 teaspoon vanilla (optional)

2 tablespoons butter, melted

1 1/2-2 cups sliced fresh strawberries


Topping

1/2 cup all-purpose flour

1/2 cup sugar

1/4 cup cold butter

1/4 cup chopped pecans


Directions

1. In a mixing bowl, add the flour, sugar, baking powder and salt; stir to mix.

2. In a second bowl, add the egg, milk and butter; stir to mix; add to dry ingredients and stir just until moistened.

3. Pour mixture into a greased 8-inch square baking dish.

4. Place strawberries evenly over the top of batter.

5. To make the topping: Combine the flour and sugar in a bowl.

6. With a pastry blender, cut in the butter until consistency of coarse crumbs.

7. Stir in pecans.

8. Sprinkle mixture evenly over the strawberries.

9. Bake at 375° for 30-35 minutes or until wooden pick comes out clean.

I was kind of surprised. All the freeze warning coming out of Florida and our local grocery store ran strawberries on sale from Florida. They were pretty good besides. Even though here in Upper Michigan it is way to early to be thinking about fresh berries the thought still gets me excited. Bananas and strawberries what a great combination. When I saw this recipe I just had to give it a try. This Strawberry Banana Cream Pie Recipe is just delicious. It is very easy to create, and does not require much prep time. The recipe says to let it set for a few hours. If you are in a rush it sets quickly allowing you to serve it much sooner. Enjoy


Ingredients

1/2 cup sugar

2 tablespoons cornstarch

1/4 teaspoon salt

4 egg yolks

2 cups milk

1 1/2 teaspoons vanilla

1 pint strawberry, sliced

1 9 in. graham cracker crust

1 large banana or 2 small bananas, peeled and sliced

whipped cream, optional


Directions

1. In medium saucepan, combine sugar, cornstarch and salt.

2. Blend together egg yolks and milk.

3. Stir small amount of milk mixture into dry ingredients, making a smooth paste.

4. Gradually blend in remaining milk mixture.

5. Cook over medium heat, stirring constantly, until mixture thickens and boils.

6. Allow to boil for one minute.

7. Remove from heat and stir in Vanilla.

8. Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes.

9. Arrange Strawberries in the bottom of the pie shell, reserving about 1/4 of them for garnish.

10. Pour half of the custard over berries.

11. Layer bananas over custard layer and top with remaining custard.

12. Cover and refrigerate for at least 3 hours.

13. Garnish with reserved berries and whipped cream.

Because of the early warm weather though out the country fresh Strawberries are in abundance right now. I don’t know if the hot weather effects how good they are-but what ever the reason they are just delicious. Berries and cream always go good together so when I saw this Strawberry Cream Cheese Ice Cream Recipe I had to give it a try. Garnish it with fresh sliced strawberries and it is a treat fit for a king. This is a very simple recipe and doesn’t take all that much time to prepare. Makes about a quart. Enjoy


Ingredients

8 ounces cream cheese
1/2 cup sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla
3/4 cup fresh pureed strawberry
1 cup half-and-half


Directions

Blend all ingredients until smooth. Chill ingredients for about 1 hour, or until cold. Then follow the directions for your ice cream machine.

Very simple to make and a delicious treat. there is very little prep time. I used fresh berries- but I am sure frozen would work just as well and with any other type of berry. Enjoy

1/2 cup 1% low-fat milk

1/2 cup low-fat plain yogurt

1 bananas (in small pieces)

1 tablespoon liquid honey

1/2 cup fresh fruit or frozen strawberries


Directions

Blend it all together in a blender

We have had a great year for berries here in Upper Michigan. Hot weather for most days and rain about one day a week. Our blueberry, raspberry and blackberry plants producing just an unreal amount of berries. I love home made ice cream. This Blackberry Ice Cream Recipe was a great way to use some of the fresh berries. A beautiful color with a fresh delicious blackberry flavor. It is a simple recipe. Most of the time is used letting the ice cream mixture cool before putting it in the ice cream machine.
I have a small ice cream machine. My only regret was it was not big enough to double the recipe. Enjoy


Ingredients

2 cups fresh blackberries, rinsed

1 cup sugar, divided

1 egg yolk

1 cup half-and-half

1 cup whipping cream

1/8 teaspoon cinnamon


Directions

1. Mix blackberries and 1/2 cup sugar in small saucepan. Bring to low boil, simmer 5 minutes to dissolve sugar and break up berries. Cool slightly.

2. Puree berry mixture in blender.

3. Press puree through fine sieve to remove seeds. Discard seeds. Set puree aside.

4. Mix egg yolk, remaining 1/2 cup sugar, and 1/2 cup half and half in a small saucepan. Cook over low heat, stirring constantly, until mixture comes to a boil and thickens slightly (about 5 min).

5. Whisk remaining half and half, all of cream and cinnamon and vanilla into cooked mixture.

6. Whisk in blackberry puree.

7. Cool and chill the ice cream base mixture for 1-2 hours or overnight.

8. Pour cold mixture into electric ice cream machine and process according to manufacturer’s directions

9. Serve garnished with fresh Blackberries if desired.

With the abundance of blackberries here this year when I saw this recipe I had to give it a try. The crust creates a dumpling like topping which works out very well. You can really create the amount of servings you want by the number of dumplings. I used 1 dumpling per serving with the black berry filling. Black Berry Cobbler Recipe is simple to make with not a lot of prep time. This a very good recipe-if you have fresh blackberries on hand your family will love it.

Ingredients

1 cup all-purpose flour

1 1/2 cups white sugar, divided

1 teaspoon baking powder

1/2 teaspoon salt

6 tablespoons cold butter

1/4 cup boiling water

2 tablespoons cornstarch

1/4 cup cold water

1 tablespoon lemon juice

4 cups fresh blackberries, rinsed and drained


Directions

1. Preheat oven to 400 degrees F . Line a baking sheet with aluminum foil.

2. In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.

3. In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries.

4.Transfer to a cast iron skillet, and bring to a boil, stirring frequently. Drop dough into the skillet by spoonfuls. Place skillet on the foil lined baking sheet.

5. Bake 25 minutes in the preheated oven, until dough is golden brown.

A little bit of work but so Delicious! The lemon zest and cream cheese -what a delightful combination. We used fresh purple raspberries out of our garden for this recipe. Any kind of berry or a combination of them would be very good. I doubled the recipe. This recipe makes 1- 16 0z shake or 2- 8 ounce shakes. This milkshake recipe is rich and delicious. I hope you enjoy!


Ingredients

1. 1 pound of fresh berries
2. 4 tablespoons of sugar
3. 3 tablespoons of jam. Match with the kind of berry you are preparing
4. 2 teaspoons of fresh lemon juice


Directions for Fruit Preparation

1. In a bowl gently combine the berries and 3 tablespoons of sugar. Let them set at room temperature for about 30 minutes. Or until they start to soften and release the juice.
2. In a medium size sauce pan combine the berries and the jam. Cook over medium heat until slightly softened. Then coarsely mash the berries using a fork. Continue cooking on medium-high heat stirring regularly until the mixture thickens to jam like consistency. Should take about 20 minutes.
3. Remove from the heat and stir in the lemon juice.
4. Taste the mixture and add the last tablespoon of sugar if needed.
5. Let cool -then refrigerate for at least 2 hours. This will keep up to 6 months if desired.

Time to make a Raspberry Cream Cheese Milkshake

1. 1/3 cup of the premixed fruit from the above fruit preparation.
2. 1/4 cup whole milk
3. 3 ounces of cream cheese at room temperature.
4. 1 teaspoon grated lemon zest.
5. 1 1/2 cups packed of vanilla ice cream
6. Fresh Berries for garnish

In a blender combine the prepared fruit, milk, cream cheese and lemon zest. Blend until slightly smooth. Add the ice cream and blend again until smooth. Top with fresh berries and enjoy!

Topped off with more fresh raspberries and whipped cream, it is delicious. This recipe is quite simple and there is not a whole lot of prep time involved. What a great after dinner treat!


Ingredients

1. 2 cups graham cracker crumbs

2. 1/4 cup granulated sugar

3. 1/2 cup melted butter

4. 1 1/2 teaspoons cinnamon

5. 8 ounces cream cheese, at room temperature

6. 1/4 cup granulated sugar

7. 3/4 cup cream

8. 1 teaspoon unflavored gelatin

9. 1/2 cup water

10. 1 lb fresh raspberry or frozen raspberries, thawed and drained


Whipped cream (to decorate)

1. Combine graham cracker crumbs, sugar, melted butter.

2. Press into a 9-inch pie pan, set aside.

3. Beat cream cheese , sugar and cinnamon until smooth.

4. Whip cream and gently fold into cheese mixture.

5. Soak gelatin in water 5 minutes in the top of a double boiler, over hot water.

6. Stir gelatin mixture until completely dissolved.

7. Stir gelatin into cream cheese mixture.

8. Fold in raspberries.

9. Pour into prepared crust.

10. Chill for 2 to 3 hours.

# Serving, decorate with whipped cream.

* 2-2/3 cups flaked coconut
* 1 can (14 ounces) sweetened condensed milk
* 1 cup seedless raspberry preserves
* 1/3 cup chopped walnuts, toasted
* 1/2 cup HERSHEY’S Semi-Sweet Chocolate Chips
* 1/4 cup HERSHEY’S Premier White Chips

Directions

* In a small bowl, combine cracker crumbs and butter. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with coconut; drizzle with milk.
* Bake at 350° for 20-25 minutes or until lightly browned. Cool completely on a wire rack.

* 1-3/4 cups all-purpose flour
* 1 cup sugar
* 1 cup cold butter, cubed
* 1 egg
* 1/2 teaspoon almond extract
* 1 cup seedless raspberry jam
* 1/2 cup HERSHEY’S Mini Chips Semi-Sweet Chocolate Chips


Directions

* In a large bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg and extract just until moistened. Set aside 1 cup crumb mixture for topping.
* Press the remaining mixture into a greased 11-in. x 7-in. baking pan. Bake at 350° for 5 minutes. Spread with jam and sprinkle with reserved crumb mixture. Bake 35-40 minutes longer or until golden brown.

Ingredients

* 1 package (4-serving size) vanilla instant pudding mix, prepared
* 1 package (3 ounces) cream cheese, room temperature
* 1/2 teaspoon almond flavoring
* 1 baked pie shell, 9-inch
* 1 package (4 serving size) raspberry flavored gelatin
* 1 cup boiling water
* 1 package frozen raspberries (10 ounces)
* 2 tablespoons sugar
* 1/4 cup chopped walnuts or pecans

Preparation

Prepare pudding mix according to directions on package. Blend in cream cheese with electric hand-held mixer. Add almond flavoring and stir until smooth. Pour into baked pie shell; refrigerate.

Dissolve gelatin in boiling water. Drain juice from thawed raspberries and add water to make 3/4 cup of liquid. Add to dissolved gelatin. Stir in sugar; chill mixture until slightly congealed. Fold in drained raspberries and nuts. Spread raspberry layer carefully over pudding and cream cheese layer in pie shell.
Chill raspberry pie until firm.

This Chocolate Raspberry Cake Recipe tastes like you spent hours on it, but it's so simple, because it starts with a cake mix. The combination of chocolate and raspberries is a marriage made in heaven, and this chocolate cake is a terrific way to enjoy it!

Ingredients

* 1 devil's food cake mix
* 4 large eggs
* 1 cup sour cream
* 3/4 cup water
* 1/2 cup buttermilk
* 1/2 cup oil
* 1 cup chocolate chips

Raspberry Glaze:

* 1/3 cup seedless raspberry jelly
* 2 Tbsp. water

Chocolate Ganache:

* 3/4 cup heavy cream
* 8 oz. semisweet chocolate chips

* Fresh raspberries for garnish

Preparation

1. Preheat oven to 350 degrees F. Grease and flour a tube pan or bundt pan.

2. With an electric mixer, beat cake mix, eggs, sour cream, water, buttermilk and oil together until smooth.

3. Stir in chocolate chips. Pour into prepared pan. Bake 42-50 minutes or until a toothpick inserted in the center comes out clean.

4. Cool completely.

5. Heat raspberry jelly and water in the microwave for 30-90 seconds until smooth. With a pastry brush, brush raspberry glaze over cooled cake. Let cool 1 hour.

6. Heat cream in a small saucepan over low heat until just scalded. Whisk in chocolate chips. Continue to cook, whisking, until thickened. Pour over cake.

7. Garnish with raspberries, if desired.

Rubus Sieboldii, the Molucca Raspberry, is a Flowering Plant in the genus Rubus. The species are native to Australia, and mid-western Asia, in the Himalaya Mountains and foothills. The shrubs prefer low wetland areas, with very good sun exposure, though the plants can tolerate moderate shade.

Uses

The plant's leaves are emmenagogues, or plants which stimulate blood flow in the pelvic area and uterus. They are also abortifacient and astringent, lending to their use to treat urinary tract infections. Molucca Raspberries are edible, and contain large amounts of antioxidant power. They are rich with bioactive phytochemicals, antioxidant compounds, and show stronger radical scavenging activities than blueberries.

Rubus Odoratus (Purple-flowering Raspberry, Flowering Raspberry, or Virginia Raspberry) is a species of Rubus, native to eastern North America, from Nova Scotia west to Ontario, and south to Georgia and Alabama.

It is a shrub growing to 3 m tall, with (unlike many other species in the genus) perennial, not biennial stems. Also, unlike most other related species this plant does not have thorns. The leaves are palmately lobed with five (rarely three or seven) lobes, up to 25 cm long and broad, superficially resembling maple leaves. The flowers are 3–5 cm diameter, with five purple petals; they are produced from early spring to early fall. The fruit matures in late summer to early autumn, and resembles a large, flat Raspberries with many drupelets, and is rather fuzzy to the touch and tongue.

Cultivation and uses

It is widely grown as an ornamental plant for its conspicuous flowers with a long flowering period. This plant likes partial shade, rich, slightly acid soil and moderate water. It is locally naturalized in parts of Washington and also in Europe, notably southeastern England.

Rubus Nivalis, commonly known as snow raspberry, is a species of Flowering plant in the rose family. It is native to western North America from British Columbia to far northern California, where it grows in mountain forests.
